Introduction

The tasteless refined polysaccharide of plant endosperm, mainly containing mannose and galactose, with a molecular weight of about 300,000 daltons, is a very good thickening stabilizer. Its most important feature is that it has a good gel synergistic effect with hydrocolloids such as agar, Danish agar, carrageenan and xanthan gum, which can make the combined dosage level very low and improve the gel structure.

Locust bean gum(LBG) from the seeds of carob bean (Ceratonia siliqua) can be used as a substrate to help identify, distinguish and characterize mannanases, such as β-mannanase (EC 3.2 .1.78). LBG can be used to develop drug delivery devices. When the crystallinity of eucalyptus and microcrystalline cellulose is destroyed by ball milling, LBG can be used to study its properties as a protective agent. LBG can be used to study its properties as a food additive, it can reduce the spoilage caused by Aspergillus flavus. LBG can be used as a starting material for organic synthesis of hyperbranched N-glycan core structure
